Pineapple is a non-climacteric fruit. The optimum time to harvest pineapple is when it is fully ripe, although the introduction of ethylene is commonly deployed for de-greening, where shell colouration is perceived by consumers to be associated with full ripeness. However, this should be carefully managed as overexposure will cause softening and breakdown of flesh. Harvest indicators include juice content (translucency) and Brix. Excessive moisture loss also results in discoloured shell, pitting and withered crown.
